Banana Breakfast Cookies
Looking for a healthy treat to snack on after that morning run? Try our banana breakfast cookies! Loaded with vitamins, protein, fibre and good fats - they’ll get you moving for the rest of the day!
In these cookies you’ll find bananas which are a great source of Vitamin C and B6, Fiber, Potassium and Manganese. Pepitas which provide you with a substantial quantity of healthy fats, magnesium and zinc. Oats a gluten-free whole grain filled with vitamins, minerals and antioxidants. Hemp seeds which are rich in healthy fats, protein and contain high amounts of vitamin E, phosphorus, potassium, sodium, sulfur, calcium and iron. All really good stuff!
Really quick to make - just mix all the below ingredients together - pop them in the oven, do a quick 15 HIIT morning workout (or a stretch if you already did that run) and they’ll be ready to go!
What you will need:
- 1 tsp cinnamon
- 2 cups rolled oats
- 1 Tbsp raisins
- 1 Tbsp pepitas
- 2 Tbsp hemp seeds
- 2 bananas
- 2/3 cup peanut butter
- 1/4 cup rice malt syrup
- Preheat oven to 180 degrees.
- Place bananas in a large bowl and mash with a fork until smooth.
- Then place all ingredients into that same bowl, stir until it’s a consistent texture & well combined.
- Use two spoons to make 12 balls, place onto a tray lined with baking paper & squash flat with the back of your spoon.
- Pop them in the oven to bake for 15-20, or until the edges have browned and are crispy, before allowing to cool on the rack.
Tip: This recipes makes twelve regular sized cookies, or make them smaller for a mini snack with your coffee. Feel free to add additional things you may have in your pantry such as; dry coconut, chia seeds, flax seeds, honey, dried fruit, nutmeg etc. The variations are endless!
